Cornish water cake

3oz margairne
5oz plain flour sieved
3oz sugar
1t almond essence
1 egg replacer
4T rasperry jam
Water
Sugar

Prehaet oven to 400f/200c/gas6 and base line a 7 inch round cake tin.

Rub margarine into flour, stir in sugar, add almond essence and egg mixture, and mix to a soft dough.

Divide pastry in half and roll out to line base of tin. Spread with jam. Roll out remainder of pastry to make a lid and place in tin. Brush with water, sprinkle with sugar, and bake for 30 mins approx.
