Lentil Sauce
- Medium onion, chopped
- 2 or 3 cloves garlic, chopped
- Red pepper, chopped
- 2 large flat mushrooms, chopped
- Green lentils (quantity more or less to taste. Some.)
- Veggie Worcestershire sauce
- 3-4 tbsp tomato puree
- Muscatel wine vinegar
- Thyme
- Salt and pepper to taste
- Saute onion for a couple of minutes, until soft.
- Add mushrooms, pepper, garlic, and saute until mushrooms are cooked.
- Add lentils, enough boiling water to cover them, Worcestershire sauce, tomato puree, vinegar, and thyme.
- Simmer for 20-30min (until lentils are soft), adding water as necessary.
- Season to taste and serve.
Notes:
- Goes well with mashed potatoes.
- Balsamic vinegar could probably be substituted for Muscatel vinegar - something rich is needed.
